W e are José Manuel and Gabi, two friends who 33 years ago we decided to partner and set up a restaurant El Botijo. Since then, we have not done nothing but work on it. We do not know of liquid nitrogen, or smoke of algae, or sprinkle with gold dust shells of clams, but in all these years we have learned anything from ham, of stews, feedlots roasted lambs and good grilled meats. Now we have two restaurants, and having got this far, I owe this to you customers. Heartfelt thanks.
