E l Bohio is primarily a family restaurant where the third generation (Pepe and Diego) through their professional experience and enthusiasm have managed to add character and mark a style to this almost forgotten Castilian inn to make it one of the temples of cuisine most important vanguard of this country. Situated on the old road to Madrid-Toledo just 35 Km. From Madrid and in the town of Illescas. El Bohio it founded a few years before the Spanish Civil War Vicente, Roman and our grandmother Valentina. The name El Bohio is because our mother's family lived in Cuba; indeed our mother was born there. A hut is a typical construction of the South American and Caribbean countries made with wood and reeds. Nothing to do with the cozy and modern atmosphere this restaurant has today but perpetuates the name of his humble origins. The restaurant is a lure for those seeking a cutting-edge cuisine but also attached to the product and the flavors of the land. One of the most decorated letters wines from Spain (which the customer comes in seven bulky volumes) is another of the attractions of this accredited table. The eatery already existed as such before the civil war and exercised even as the only place to stop for lunch between Madrid and Toledo, after making his famous recipe for pickled partridges.
